Appetizers, first and second courses with local Piedmontese dishes

The typical cuisine, offered by the Antico Agnello Restaurant, is composed of local and seasonal dishes that are distributed in the different courses.

Beginning with appetizers, the typical cuisine offers dishes that are inspired by the ancient peasant and pantagruelian tradition, thus with sumptuous and plentiful local dishes ranging from bagna ''cauda,'' which is typically an autumn dish, to vitello tonnato, raw meat with duck breast, to pate, chicken with anchovies and truffle oil.

Along with these local dishes, Ristorante Antico Agnello also prepares typical Italian-style appetizers with locally produced cured meats, such as liver mortadella, salame della Duja, and smoked ham from the Vigezzo Valley.

The first and second courses offered by the restaurant are also part of the traditional Piedmontese cuisine.

As far as first courses are concerned, the restaurant offers both fresh pasta, such as tagliatelle and tagliolini paired with rabbit, duck or goose ragout or with local cheese fondue and mushrooms, and lasagnette.

The latter is a classic dish made with whole wheat flour and served with Strona Valley goat cheese or with Castelmagno cheese and leeks, or with asparagus and tome fuse depending on the season.

In addition to this typical cuisine, the restaurant also serves risotto with traditional rice.

The main courses in Miasino's typical Novara cuisine are mostly comprised of meat and fish.

Therefore, there are both typical seasonal dishes, such as lamb chops with mint and balsamic vinegar, rabbit rolled with olives, and goose confit with cabbage, as well as fish dishes related to the typical Piedmontese cuisine of the lake areas.
